Happy Birthday Libby

Yesterday was Libby’s second birthday. I can’t believe where the last two years have gone and I’m so proud of the lovely little girl she has grown into. 

The last few days have been really busy with the new baby, a trip to Swansea, a wedding, a job assessment for me and a hospital appointment for Libby. As you can imagine, this didn’t leave much time for baking, so I unashamedly cheated when it came to Libby’s birthday cake. 

I had intended to bake a train cake, and popped over to chat to my sister about it while she was home because I knew that they had a nice recipe book with novelty cakes in. Unfortunately, there wasn’t a train in there, so Emma came up with the idea of making a train out of Swiss rolls. I made the most of the reduced prices at Morrisons to buy the ingredients and made my own take on a cheat’s Swiss roll train cake. 


I know what you’re thinking; I’m a creative genius. Well here are the ingredients: 

Two chocolate logs, two packs of Jaffa cakes mini rolls, a packet of jammy dodgers, a Tunnock’s teacake, some candy floss, matchmakers, chocolate fingers, jelly beans, flying saucers, chocolate raisins, chocolate buttons, rainbow drops, chocolate buttons and white chocolate buttons with dots on, some left over sweets from the cupboard, some cocktail sticks and some borrowed candles (I forgot to pick them up at the shop). Other than the left over sweets from the cupboard and the candles, I bought everything from Morrisons. The jammy dodgers, jelly beans and chocolate raisins were all reduced on the Morrisons price checker. 

I know I was totally cheating, but I just didn’t have much time and actually, I think it looks rather good! I made some scones and served them with clotted cream and jam to make up for my cheating on the cake front. We also invited some family round for a birthday tea of Libby’s favourites – sandwiches, crisps, dips and olives. Not exciting, but exciting for Libby. Here she is blowing out the candles on her cake.
